When you press the camera shutter, light passes through the lens and hits the image sensor. A standard JPEG file is like a 'cooked meal' where the camera automatically seasons and bakes that light into a set color and brightness. It looks ready to enjoy immediately, but if it turns out too salty or bland, you cannot easily undo the cooking.
In contrast, a RAW file is like raw ingredients. It captures the pure light signals recorded by each sensor pixel without any added seasoning or compression. Just as a chef can season to taste and control the heat, a photographer can fine-tune every nuance of the image.

The main reason is the sheer amount of color and tonal information preserved. A standard JPEG records colors in 256 shades per channel (8-bit), whereas a RAW file captures 4,096 shades (12-bit) up to 16,384 shades (14-bit). This produces significantly smoother color and tonal gradients.
This difference truly shines when adjusting white balance to fix color temperatures. If an indoor photo looks overly orange under warm tungsten light, you can adjust a single slider to make it look like natural daylight. Because the file contains pure, unprocessed sensor data, tweaking colors will not degrade the image quality.
You can also recover blown-out highlights, such as the subtle textures in bright clouds. By preserving an extensive dynamic range, RAW protects you from ruined shots even in challenging lighting conditions.
To Be Precise: It Isn't Always Ideal
Should you shoot every everyday photo in RAW? Not necessarily. Because it retains every bit of data, the file sizes are massive. On the same memory card, you might only fit a fraction of the shots you could store as JPEGs.
Furthermore, a RAW file is not a finished image format. You cannot directly share it via messaging apps or post it to social media without first processing and exporting it in dedicated editing software. Since it only contains raw numerical sensor readings, a computer must interpret and render those numbers into a viewable image.
If your main goal is quick sharing and easy storage, lightweight JPEG files that open anywhere are much more convenient. On the other hand, for commercial shoots, landscape photography, or any project requiring precise post-processing, RAW is indispensable.
